I know I have said it so many times, but I do really love lazy weekend brunch! It’s stronger than me! But I do have my brunch without falling off the wagon (not too much), therefore it’s important to always find healthy ways to cook delicious food.

This is a recipe that makes a huge success every time I invite friends for brunch. Ricotta cheese pancakes are simply delicious, and of course I make them with oats flour, because it is so healthy!!

Healthy oatmeal muffins

As you might have noticed here, I am obsessed with oatmeal! A healthy obsession, one must say, being oats one of the worlds superfoods, I couldn’t be more happier with this obsession!

Dukan inspired “Bread”

If I took something from the Dukan diet and incorporated it in my daily routine, it was the oatmeal “bread” AKA Dukan galettes. Having these galettes, let’s call them for this post, “bread” it sort of tricks my stomach into thinking that I am actually having bread at the same time as I eat oats, which, as we know, are super mega healthy, win-win!

DIY Oats flour

I’ve wrote how obsessed I am with oats, not only are they super mega healthy but also considered one of the worlds superfoods! Besides the normal way to have them, you can also replace wheat flour for oats flour, it’s another great way to integrate oatmeal in a balanced and healthy diet.

There are no exact measurements, I usually do 500gr at a time, but this is entirely personal.
